MAYONNAISE VERDE

DUCK FAT.. “La Délicate”
Home-made mayonnaise is so good! And when it’s made with Sublim’ “La Délicate” duck fat and herbs, your table will be graced with a stylish and sophisticated “signature” mayonnaise. A key ingredient in hard boiled eggs with salad and mayonnaise, it also goes well with (hot or cold) meat and fish, or in a gourmet sandwich, and so much more... Rediscover childhood joy as you savour a spoonful of Mayonnaise Verde melted over some cooked meat or fish... So then, here is an original recipe full of character that offers something different from the traditional mayonnaise.
Preparation : 15 min
serves 4 to 6
Egg yolk: 2
SUBLIM’ “La Délicate” duck fat: 100 g
Vinegar: 1/2 tsp
Mustard: 1 tsp
Salt
Pepper
Parsley / chervil: 1/2 bunch
Tarragon 1 sprig
Spinach: 20 g (optional)

Ustensils

1 high-sided bowl
Hand blender

Préparation

Add the egg yolks, salt, pepper, mustard and vinegar into a high-sided bowl.
Using a hand blender, process slowly, gradually adding a little SUBLIM’ “La Délicate” duck fat in a liquid state (room temperature, but not hot).
Finish the mayonnaise with the chopped herbs.

Tip: For a nice green colour: blanch the spinach leaves for 3 mins and then cool.
Press hard to draw out the water, then blend until very fine (strain through a sieve) before adding.
