Using a hand blender, process slowly, gradually adding a little SUBLIM’ “La Délicate” duck fat in a liquid state (room temperature, but not hot).
Finish the mayonnaise with the chopped herbs.
Tip: For a nice green colour: blanch the spinach leaves for 3 mins and then cool.
Press hard to draw out the water, then blend until very fine (strain through a sieve) before adding.
