Concrète Duck Fat / Ginger & Fenugreek

Introducing our new collection of flavours: Les Concrètes. These preparations will generate new recipes, to be revealed next year. Les Concrètes will lend a unique elegance to your dishes. You need to prepare them ahead of time to allow the flavours to infuse.

Baking : 10 mins
200 g jar
Sublim’ “La Délicate” duck fat: 200 g
Fresh ginger: 40 g
Fenugreek: 2 tsp

Ustensils

1 grater
1 airtight jar

Préparation

Grate the ginger;
Heat the Sublim’ “La Délicate” duck fat to 60 °C;
Add the ginger and fenugreek;
Leave to infuse for 1 hour;
Place in a jar and refrigerate.
