Peel and slice the onion.
Sweat the onion with the DUCK FAT “La Délicate” Sublim’ in saucepan, covered, over low heat for 10 minutes.
Add the beetroot and transfer to a blender.
Add the salt, basil and lemon juice.
Blend to obtain a creamy texture, adding a few drops of toasted sesame oil.
Keep for two to three days maximum in the fridge in a jar or a small container with a lid.
Tip : Serve with vegetable crisps or bread, or… savoury scones.
