Savoury Crumble

DUCK FAT.. “La Délicate”
Fancy an original meal that is simple and tasty with a crunch? And fast! A savoury crumble. For children, teenagers and adults, chicken is a favourite meal. However, you cook it, this meat is protein-rich, low in fat and easily absorbed by the human body. We’ll show you how to pair this white meat with an exquisite savoury crumble that will make you “crave the very last morsel”.
Preparation : 80 minutes
Baking : 15 à 20 minutes
serves 4
45 g high quality duck fat
40 g breadcrumbs
40 g ground almonds
2 tsp mustard seeds
10 g parsley or chopped herbs
10 g yellow mustard
4 skinless chicken breasts
salt, Espelette chilli pepper, pepper: to taste

Mix all of the ingredients together.
Spread out a thin layer of this mixture between two sheets of non-stick baking paper place in the refrigerator for at least an hour. (or put in the freezer if you are pressed for time).
When the crumble is well set, take the chicken breasts, season very lightly, and then break up the crumble to cover the chicken fillets.
Place onto a baking tray in a preheated oven at 180 °C.
Leave to cook for approximately 15/20 mins depending on the thickness.

Tip: roughly break up the crumble and bake on a non-stick tray at 160°C until golden, then sprinkle over cooked meat or add into a salad to add a delicious crispy touch.
