new potatoes with smoked duck breast

DUCK FAT.. “La Délicate”
Consuming local produce is a way of protecting our heritage and defending all of our regions. Beautiful, flavoursome new season potatoes from my market gardener; and breast fillets from traditional corn-fed ducks: such simple products, however, as we know, it often takes very little to make a feast. New potatoes are fairly neutral tasting, which gives them the advantage of easily adopting the flavours of the ingredients around them. This is why they go perfectly with smoked duck breast and our pure rendered duck fat. Hmmmm... so good!

serves 4
500 g small new potatoes
50 g duck fat
10 slices of smoked duck breast
1 bay leaf
1 sprig thyme
3 garlic cloves
fleur de sel

Préparation

Preheat the oven to 180°C.
Wash the potatoes (without peeling them).
Into an oven dish, add the duck fat, bay leaf, sprig of thyme, garlic cloves (unpeeled) and potatoes.
Lightly season with salt.
Place in the oven and bake for 20 minutes, then add the slices of smoked duck breast.
Finish by cooking for a further 10 minutes.
Once out of the oven, sprinkle with the fleur de sel and serve immediately!

Tip: You can substitute 3 sage leaves for the thyme.
